We owe it to this tea to give it its proper romanisation or pinyin. This is the domestic (guo nei) version of “lapsang souchong”, the exact same Fujian varietal but with no smoke-finish, just the way the locals like it, and frankly, just the way it should be had. Warmed toffee comes to the fore on the leaf’s awakening, holding the drinkers attention until they’re done, usually on their fourth infusion. It holds on, doesn’t let go until it sinks into your mind that this is how it’s meant to taste. You abandon all previous misconceptions created by its bastardised, tarry export version and let truth reign supreme.
 
Dry leaves: mid-length, twisted, brown
Taste: hazlenut, molasses, malt
